Slow Cooker Chicken Stuffing Casserole
Over on GOODEness Gracious recently, I shared the my take on the original recipe for Slow Cooker Chicken Stuffing Casserole fromGooseberry Patch Cookbook: Everyday Simple Suppers. (Another great cookbook that I highly recommend.)
Miss Add calls this yummy dish Chicken and Stuffin’ Dumplins and I swear she begged for all of the leftovers until they were gone. Note: This recipe tends to be a little more moist than traditional stuffing casseroles, so if you prefer the drier texture, you may want to reduce your liquid in the recipe, however we like it as is.
Flavor Tip
If you want your stuffing to be full of flavor, substitute chicken broth for your water when preparing your stuffing mix. You will never use water again. Seriously good.
Time Saver Tip
Have a recipe that calls for chicken but you don’t have time to cook it up as directed? Pop by your grocery store and pick up a rotisserie chicken and cut it up instead.

Turn an everyday dinner into a holiday tasting treat, Slow Cooker Chicken Stuffing Casserole.

Ingredients
- 12 oz Chicken Flavored Stuffing Mix (2-6 oz pkgs) prepared as directed except with broth instead of water
- 20 oz Cream of Chicken Soup (2-10 oz cans) I used Healthy Request-Divided
- 1/2 Cup Milk
- 3 Cups Cooked Chicken cubed
- Optional: 8 oz Shredded Cheddar Cheese
Instructions
Prepare stuffing as directed replacing water with broth.
Place in a sprayed 5 QT Slow Cooker
Stir in one can of soup.
In another bowl, mix milk, chicken and other soup.
Pour over stuffing.
Sprinkle cheese on top.
Cook on Low for 4-6 Hours

When I fix things in a crockpot it always seems to be to much liquid. How do you thicken it up?

It depends on the recipe. If it is a recipe that is a soup, has a sauce or has a lot of cooking liquid at the end, you could stir in a cornstarch/water mixture at the end on high and stir it occasionally until it reaches the desired consistency (keeping in mind it will thicken some as it cools). If it a casserole type recipe, you can try reducing the liquid ingredients a little to make it more to your liking. Hope this helps!~Aunt Lou

I am going to make this for a pot luck – later this week. I can not tell you how happy I was to see that you use the Healthy Request soups. Those as the only kinds of soup that I can use because I am so highly allergic to MSG and they have none. Also I can adjust the amount of sodium I add – as they are low sodium to begin with. Thanks again for all of your recipes.Reply
