To make the Crispy Fried Noodles
- To make thecrispy fried noodles recipe | Indian style crispy fried hakka noodles at home |Chinese fried noodles |in a deep non-stick pan, add enough water to boil the noodles and add the oil to it. We have used hakka noodles here.
- Now add the salt. We add the salt at this stage as it not only helps the water come to a boil faster but also gives flavor to the noodles.
- Let the water come to a rapid boil.
- Once it starts boiling, add the noodles. We have broken the noodle cake into 2 pieces to make the boiling easy and fast.
- Cook on a medium flame for 3 to 4 minutes, while stirring occasionally. The noodles should be cooked until they are al dente i.e. cooked to be firm to the bite and should not be mushy or sticky.
- Drain well and throw the water away.
- Refresh the noodles under cold water. This ensures that they stop cooking.
- Transfer to a plate and allow the noodles to dry completely for 10 to 15 minutes.
- Heat enough oil in a deep non-stick pan.
- Lower the flame to medium and a few noodles at a time when the oil is hot enough.
- Deep-fry on a medium flame till they turn golden brown in color from all the sides and the oil stops bubbling. Keep turning the noodles using a perforated spoon time and again to make sure that the noodles they evenly cooked.
