We own and operate two bakery production facilities, one in Calabasas Hills, California, and one in Rocky Mount, North Carolina, where we produce approximately 70 varieties of cheesecakes and other baked desserts based on proprietary recipes.

Made from Scratch

With more than 250 items on our menu, it may be hard to believe that we make things fresh and from scratch in each restaurant – but it's true! Our prep kitchens are one of the busiest spots in our restaurants, and it's where the magic begins every day.

We do not recommend freezing a previously thawed cheesecake, we recommend refrigerating it to enjoy within 5 days.

Most restaurants require servers to memorize the menu, but that can't possibly be true with The Cheesecake Factory's Ulysses-length tome, can it? Oh, yes it can — servers at The Cheesecake Factory have to learn the entire menu by heart.

The company's also in the midst of revamping its bar section with upgraded TVs, seats and a more polished look. To avoid calling too much attention to people who dine alone, hosts at the Cheesecake Factory are told not to use the phrase "party of one" when alerting someone that a table is ready.

I ate at a Cheesecake Factory a few days ago, and our wonderful waitress informed me that they only use canola oil. There were only a few menu items that I needed to avoid because of soy sauce or mayonnaise. I ate fried macaroni and cheese, and fish and chips (without the tartar sauce and cole slaw).

As the restaurant grew, The Cheesecake Factory eventually had to outsource bread production to a commercial manufacturer. The bread may not be baked fresh anymore, but at least it's still unlimited.
