Simple Chocolate Truffle Recipe

Since we’ve been on our little journey to cut processed foods out of our diet and sticking to eating from scratch over the last few years, I’ve found that as time goes by I crave less and less chocolate.

A few years ago, you would NEVER catch me saying something like that! I was very addicted to chocolate until I realized that with most versions, I was getting headaches (from the processed sugar in them). Now the cravings have slowed, and we only eat chocolate for a treat once in a while (and I’ve found some made with not as processed sugars, so no more headaches!)

That said, I still love a good chocolate treat now and again! Normally I bake cookies like our easy No-Bake Cookies or the Oatmeal Lace Cookies and drizzle some chocolate on the top but this time I really wanted a delicious treat (and I really really don’t want to turn the oven on much on the warmer days!).

These 2 Ingredient Chocolate Truffles were the perfect solution. They are no-bake and SO easy to make! Plus, you only need 2 ingredients for these little delights. I hope you enjoy them; we love them for a special treat! I’ve also heard from many readers that they’ve given them as gifts.

These truffles do NOT use sweetened condensed milk, so the only sugar that they have in them is in the chocolate chips. Use sugar-free chocolate chips, and you’ve even got a sugar-free snack!

Ingredients in 2 Ingredient Chocolate Truffles

What You Need:

  • Cream Cheese. You will want this softened very slightly so it’s easy to work with. I like the full-fat cream cheese.
  • Chocolate Chips. I’ve used semi-sweet and milk chocolate chips, but you can use just about any flavor you’d like. Get creative!

Oh yes, that really is all. 🙂

Instructions for Making 2 Ingredient Chocolate Truffles

Place the cream cheese in a bowl. You want it to be softened slightly so you are able to mix in the chocolate easily but you don’t want it too melty so that you can’t form balls with it. Placing it at room temperature for a bit before you make these will do the trick.

2 Ingredient Chocolate Truffles Recipe (4)

Melt the 1/3 cup of chocolate chips in another bowl. You can do this on the stovetop in a small saucepan or in the microwave. Stir to make sure there are no large pieces.

2 Ingredient Chocolate Truffles Recipe (5)

Pour the melted chocolate into the cream cheese. Are you drooling yet?

2 Ingredient Chocolate Truffles Recipe (6)

Whip the melted chocolate into the cream cheese. I could easily incorporate it by just using a spoon, but you would also use an electric mixer to make sure all the chocolate is mixed in, and there are no large pieces of plain cream cheese left.

2 Ingredient Chocolate Truffles Recipe (7)

Using a small cookie scoop (or just a tablespoon), drop spoonfuls of the chocolate mixture onto a cookie sheet covered in waxed paper or parchment paper. Place this pan in the fridge and let the balls chill for a few hours until they are hardened.

2 Ingredient Chocolate Truffles Recipe (8)

Once the truffles are hardened, melt more chocolate chips and dunk the balls until they are coated. If you don’t want to use so many chocolate chips, you can skip this step and coat the truffles in cocoa powder instead.

Variations to the Basic Recipe

Yum, these Simple Chocolate Truffles are such a tasty treat! Store in a covered container in the fridge until you are ready to enjoy. You could add different flavorings (like orange or raspberry or pure vanilla extract) for a little bit of a different treat or even whip in some peanut butter for chocolate peanut butter truffles!

You could also try using different kinds of chocolate chips to change up the flavor and look. Vanilla chips for white chocolate truffles, peanut butter chips, dark chocolate for a dark chocolate truffle….the sky is the limit! You could also use sugar-free chocolate chips to make this a totally sugar-free treat (keto chocolate truffles!) very easily.

They could also be coated with something other than melted chocolate, such as unsweetened cocoa powder, shredded coconut, powdered sugar, or crushed candy cane.

You could also make the recipe as is and sprinkle them with a bit of crushed pistachios or other nuts, sea salt, or another small garnish.

How to Store Homemade Truffles

Any leftover truffles that aren’t getting eaten right away should be stored in an air-tight container in the refrigerator for up to 2 weeks. These truffles do not do well in the freezer, so I wouldn’t recommend freezing.

FAQs

Why won t my chocolate truffles set? ›

If using milk chocolate, reduce the cream to 1/2 cup as milk chocolate is much softer than dark chocolate. Heavy Cream: Heavy cream or heavy whipping cream is also a base ingredient. Do not use half-and-half or any other liquid because the truffles won't set up properly.

What is a substitute for heavy cream in truffles? ›

Full-fat coconut milk or a blend of coconut milk and coconut cream are an ideal substitute for heavy cream.

How do you firm up a truffle mixture? ›

Forming Truffles

It helps if you have cold hands or are in a cool room. Chill the truffles briefly, for about 15 minutes, while you prepare whatever you'd like to enrobe them in. If your ganache isn't firm enough to scoop into balls, you can chill it in the fridge to harden.

What makes chocolate truffles so good? ›

However, unlike regular chocolate-coated candies, chocolate truffles change the chocolate's composition by melding it with heavy cream. Blending chocolate with boiling cream results in a rich, thick mixture known as ganache, which is similar to velvety icing but not as spreadable.

Why are my truffles not holding shape? ›

Also, says out senior food editor Andy Baraghani, adding too much of a liquid will make the truffles challenging to roll; they won't hold their shape because they'll be too watery. With alcohols—that includes extracts—you'll want to wait to add them until you take the mixture off the heat.

Can I use evaporated milk instead of heavy cream? ›

One cup of heavy cream can be replaced with one cup of evaporated milk, or three-quarters of a cup of milk plus one-third of a cup of butter. Editor's note: Evaporated milk lends a slightly toasty, caramel taste, so keep that in mind when adding it to recipes.

How do you thicken truffles? ›

For a thicker ganache used for piping or chocolate truffles, the amount of chocolate will be more with less cream, a 2:1 ratio (two parts chocolate, one part cream). For a thinner ganache used for glaze or drizzling, the amount of cream will be more, use a 1:2 ratio (one part chocolate, two parts cream).

Can I use milk instead of heavy cream? ›

Similarly to half-and-half, milk makes a good heavy cream substitute when it's combined with melted butter. Combine 3/4 cup milk and 1/4 cup melted butter for every cup of heavy cream. This mixture is not suitable for whipping. Best for: cooking and baking.

What if chocolate truffle mixture is too runny? ›

If the mixture is getting too soft, put it in the fridge or freezer and let it firm up before continuing.

What enhances truffle flavor? ›

Fats work perfectly with truffles, and help bring the full flavor out, which is why truffles are usually paired with fatty foods like foie gras, butter, cheese, cream, and oils.

What is the difference between ganache and truffle? ›

Presentation: Truffles are typically shaped into small spheres and coated with a dusting of cocoa powder, sugar, or nuts. Ganache is more flexible in presentation, as it can be used as a filling, glaze, or frosting, adapting to the specific dessert or recipe.

What kind of chocolate is best for truffles? ›

ONLY 2 INGREDIENTS FOR CHOCOLATE TRUFFLES RECIPE

Dark chocolate - I always recommend pure dark chocolate chopped from a block because it has a higher melting quality with higher cocoa butter content. You can use anything between 50% and 70% dark chocolate.

Why are Lindt chocolate truffles so good? ›

In our recipes, we use special blends of cocoa bean varieties from different regions. These bean combinations are a closely guarded secret and are what give our Lindt chocolates their exquisite taste. Furthermore, Lindt & Sprüngli is one of the few “bean-to-bar” chocolate makers in the world.

Is there a difference between truffles and chocolate truffles? ›

Homemade chocolate truffles are named after truffles because of the striking resemblance with the original truffle mushrooms. While one is the expensive fungus that grows underneath the oak trees, the other Is the intricate chocolate ganache coated in tempered chocolate as a chocolate coating.

Why is my chocolate not hardening? ›

The chocolate wasn't tempered (or pre-crystallised)

As a result, your chocolate won't harden and will continue to feel wet. Always temper your chocolate properly before working with it.

How to fix loose ganache? ›

If your ganache's fluidity is too high, it most likely means the ganache contains too much cream. Therefore, the texture becomes more runny and liquid-like. Therefore, our chefs recommend you to add chopped chocolate into the ganache to thicken it back.

What if my truffle is too wet? ›

Fresh truffles should be firm, not spongey. Over time, they will gradually soften a little and there is nothing wrong with them at this point. But the carbohydrate within the truffle is breaking down, releasing moisture, and therefore, the precious aroma. If they become squidgy and wet – they have perished.
